Mock Duck in Tomato Sauce
The Yum Yum Tree serves a range of mock meats such as the Vegetarian Peking Duck. Made out of wheat and soya, the accompaniments include cucumber, scallions, steamed pancakes and hoisin sauce.
Ingredients
1 tin mock duck (available at international food stores)
1 small tomato, chopped
2-3 red and green chillies
50g red, green and yellow bell peppers, chopped
1 medium onion, chopped

1 spring onion, chopped
1 tbsp hot and sweet tomato ketchup
1 tsp vegetarian oyster sauce
1 pinch white pepper powder
K tsp sugar
K tbsp chilli paste
K tbsp vegetable oil
1 tsp garlic, chopped finely
K tbsp rice wine
Cornflour
Oil for frying
Salt to taste
Method
Cut the mock duck into bite-size pieces and roll in cornflour. Heat oil in a pan and fry the mock duck pieces on low flame till crisp. Keep aside.
To make the sauce, take a fresh pan, pour oil and add garlic to it. Immediately add all the vegetables and cook for a minute.
Add the hot and sweet tomato ketchup, followed by the remaining ingredients, except the wine.
Now add the fried mock duck pieces and toss in the sauce. Cook for 2 minutes or till the gravy dries up. Finally add 10ml of rice wine. Take off the fire and serve.
