The tomato pasta turned out AMAZING. I couldnt believe it was home-made. The texture and appearance was really nice, apart from the flavour. It had to be the wine. Or maybe it's the roasted tomatoes and garlic. I think next time I'll keep them separate for roasting else the garlic dampens. I used pizza mozarella -- that gave it a rubbery stringy feel. Thank you -- this is a sure winner.
