There was always a large variety in vegetarian food in India. What exactly is new about that? I find Mr. Roy’s statement quite ridiculous that vegetables are flown in and the regional ones are not used. While in Europe the trend is to use more regional and organic stuff due to environmental issues, is India ‘developing’ in another direction?
