Panaji: Various aspects of traditional Asian cuisine will be discussed at an international conference beginning here from 2September.
Renowned TV host Sanjeev Kapoor will inaugurate the four-day meet, Anjali Rao, Chairperson, Indology Goa, the organizers of the conference, told PTI.
“The focus of the conference will be on healthy traditional cuisines and their relevance and integration with modern fast-paced life and food styles,” Rao stated.
The meet will examine the evolution, benefits and state of research on our tradition diet, as well as the potential and problems associated with its survival.
The conference will have veteran food experts Thanga Philip, Tarla Dalal, Mrunalini Devi, Chancellor, Maharaja Sayajirao University of Baroda.
Rao said around 25 cuisine experts, including Niru Gupta, Nutan Pandit, Pratibha Jain, Jigyassa Giri, Siddharth Wakankar, Alka Pandey and Sumit Paul will be making presentations on various aspect of traditional Asian food.
Another aspect that will be brought up by food experts is the gradual decline in preference for traditional Goan food preparations and the threat it faces as western culinary practices gain predominance in Goan homes.
“Over the years, Goa has evolved from being a quiet state with beautiful virgin beaches to a bustling tourist epicentre. This has enticed food businesses that comprise essentially of restaurants that started to serve fusion cuisine. Due to lack of dedication and interest to maintain accuracy by such restaurants, Goan cuisine began losing favour and authenticity,” Rao said.
The organizers have also planned a year-long campaign to promote authentic Goan cuisine in India and abroad.
