Chet-Tha His Byan (Burmese chicken curry)
Ingredients
250g chicken leg, diced
100g onions, chopped
100g tomato puree
1 bay leaf
2g cumin powder
2g coriander powder
1 cinnamon stick
2g garam masala powder
5g red chilli powder
3g turmeric powder
½ lemon grass stick
10g galangal
15g ginger, chopped
15g garlic, chopped
25ml vegetable oil
5ml soya sauce
2g aromat (used in place of aginomoto)
Salt to taste
Method
Heat oil in a wok and fry the chopped onions until brown. Add the ginger and garlic and cook for a minute. Add the bay leaf, cumin and coriander powder, galangal, lemon grass and saute for another minute or so. Add the turmeric and red chilli powders and cook on high heat. Add the tomato puree and cook until the oil starts to separate. Add the diced pieces of boneless chicken and cook on high heat. Add soya sauce, salt and aromat and cook until the chicken is done. Serve hot, garnished with fresh red chilli and steamed rice.
