Cooking with Lounge | Lamb, Lucknavi style

Lamb in Plum Sauce (Aloo Bukharay Ka Salan)
Ingredients
500g lamb chops
1 tbsp ginger-garlic paste
K tsp red chilli powder
250g onions, finely chopped
2 tbsp tomato purée
40ml yogurt, whipped
1 tsp turmeric
1 tbsp coriander powder
7-10 dried plums
1 tbsp garam masala powder
50ml vegetable oil
100ml water
Method
Take a heavy bottom pan, add 2 tbsp of oil to it and fry the onions till they are brown. Take off the flame and grind the onions into a paste.
Heat the remaining oil in a separate pan, add the ginger-garlic paste, red chilli, garam masala and coriander powder, and turmeric. Add the lamb chops and sauté with the spices. Add tomato purée and cook for 10 minutes. Add the yogurt and cook on low flame for 5 minutes more. Add the brown onion paste and dried plums. Pour around 100ml water, enough to cover the meat and cook it on dum until the meat is tender. Serve hot garnished with shredded plums and fresh coriander.
