Kuku Paka (chicken stew)
Serves 2
Ingredients
500g chicken, boneless
2 tbsp ginger, grated
N tbsp garlic, powdered
1 tbsp oil
2 small white onions, chopped
1 green chilli, chopped
N tsp turmeric powder
1 tsp cumin powder
1 tsp sugar
4 tomatoes, chopped
200ml coconut milk
3-4 drops of lime juice
6 cloves
K tsp white pepper powder
Salt to taste
Method
Marinate the chicken with lime juice, 1 tbsp ginger and garlic powder and keep aside for 30 minutes. In a pan, heat oil and sauté onions for 2 minutes until they start to brown slightly. Add the salt, cumin powder and cloves. Now, add the chicken pieces and cook for 2 minutes. Add the remaining ginger, and turmeric. Next, add the tomatoes and chilli, and cook for approximately 6 minutes. Add the coconut milk, sugar and white pepper. Serve warm with flat bread or rice.
