Cooking with Lounge | Mango chicken

Ga Xao Hot Dieu
Serves 4
Ingredients
150g chicken breast, cut into pieces
40g red capsicum, diced
40g green capsicum, diced
20g onion, chopped
10g shitake mushroom
10g coral mushroom
5g garlic
7ml sweet black soy sauce
10ml oyster sauce
2g black pepper, crushed
5ml refined oil
25g cashew nuts
100g ripe Safeda mango, diced
Method
Dice the capsicums and remove the seeds. Soak the coral and shitake mushrooms in water till soft, then cut into small pieces and remove the stems. Dice the mango. Fry the chicken pieces till slightly brown and keep aside.
In a wok, heat refined oil and sauté the garlic. Then add the chicken and capsicum. Toss them a little and add the soy sauce and oyster sauce. Sprinkle water in between. Add crushed black pepper, throw in the shitake and coral mushrooms. You can also use button mushrooms instead. Cook till the chicken is tender.
Add some crushed cashew nuts, and throw in the diced ripe mango before removing from fire. Sprinkle some white pepper to taste.
