It’s a 5x5 inch box crammed with Thai goodness: a chunk of galangal, several bird’s-eye chillies, a few sprigs of kaffir lime leaves, two lemon grass stalks and a bunch of lemon grass leaves. Packaged inspiration for a quick beef curry, with the fresh ingredients elevating the store-bought red curry paste several notches. Sauté the paste in some coconut milk, add julienned galangal (the paste already has some, but I love the sharpness of young galangal), fish sauce, brown sugar, bruised lemon grass stalk, stop to inhale the aroma. Add some more coconut milk, beef strips, ground peanuts and cook till almost all the liquid evaporates and the meat is done. Add chillies (they’re HOT), kaffir lime leaves and salt.
I wish the box also had some Thai basil leaves. Would have been the perfect garnish for the perfect Thai beef curry.
