Mapo Tofu
Ingredients
400g tofu
3-4 black mushrooms, chopped
2 tsp chilli bean paste
3-4 spring onions, chopped
3 garlic cloves, chopped
20g ginger, chopped
2 tsp cooking wine
2 tsp soya sauce
1 tsp sugar
50ml cooking oil
2 tbsp potato starch
Salt to taste
1 tsp black bean sauce
2 tsp chilli oil
Method
Dice the tofu and boil for 2-3 minutes. While on boil, add salt to taste.
To make the dish, add cooking oil to the wok and sauté chilli bean paste, ginger, garlic, spring onion and mushrooms.
Add cooking wine, black bean sauce, salt to taste, water, tofu, sugar and soya sauce on low fire. Add potato starch. Be careful not to break the tofu dices. Put in the chilli oil and cook for 8-10 minutes.
Optionally, garnish with chopped spring onions.
