Costolette Di Maiale (Pork chops)
Ingredients
2 pork chops (300g)
40ml red wine
15ml olive oil
½ tbsp mushrooms, chopped
½ tbsp gherkins, chopped
50ml demi-glace (brown sauce)
1 tbsp onions, chopped
1 tsp crushed pink pepper
2 tsp parsley, chopped
2 tsp thyme
3 tbsp garlic, chopped
Salt to taste
Method
In a bowl mix 20ml red wine, 5ml olive oil, a tablespoon of garlic and one teaspoon each of thyme and parsley. Add salt to taste. Put in the pork chops, and evenly coat with marinade on both sides. Leave aside for about 30 minutes. Chargrill the pork chops for about 5 minutes, till tender.
Take a pan and heat the remaining olive oil in it. Put in the remaining garlic, thyme, parsley and onions, pink pepper, gherkins, mushrooms and red wine. Cook for a minute, add the demi-glace to it. Put in the grilled chops and cook for a minute. Remove from fire and serve with mashed potatoes.
