Cook Out | ‘Paneer’, Ethiopian-style

Ingredients
100g yogurt
250g cottage cheese
2 tsp salt
N lemon zest
N tsp black pepper
2 tbsp chopped fresh parsley
1 tsp olive oil
1 pinch ground coriander powder, roasted
Method
Marinate the cottage cheese in the yogurt and leave it for 30 minutes. Now, take a pan and heat the olive oil in it. Put the marinated cottage cheese into the pan and gently cook for 4-5 minutes. Once the cheese starts to brown slightly, add the salt, coriander powder, pepper and lemon zest. Add the chopped parsley and cook for 1 minute. Serve immediately, with flat bread or rice.
