HONEY-GLAZED APRICOT PIE
(makes 2 pies)
Ingredients
For the pastry dough
150g refined flour, sieved
100g yellow butter
100g powdered sugar
For the filling
4 green tomatoes (small)
75g powdered sugar
20ml honey
20g dry apricots, chopped
1 tsp cinnamon powder
40g crumbled sponge cake
Method
For the pastry dough, cream the butter and sugar together. Add flour and knead to get a soft dough. Take two tart moulds and line with the dough.
For the filling, stew the tomatoes with sugar for 4-5 minutes. Add cinnamon powder, dry apricots and remove the excess liquid from the pan. Allow it to cool. Add honey and mix well. Fill the tarts with the cooled stuffing and sprinkle the sponge crumble on top. Bake at 200 degrees celsius for 20 minutes in a preheated oven.
Optionally, serve with cream or custard.
