Potato and olive tagine
Cooking time: around 25-35 minutes
Serves 2
Ingredients
4 tbsp olive oil
1 onion, sliced into rings
2 carrots, peeled
2 tomatoes, sliced
2 large potatoes, peeled and sliced N-inch thick
250g green beans
100g pitted black olives
1 tsp ginger powder
K tsp turmeric
A pinch of saffron
1 tsp parsley or cilantro, chopped
K cup chickpeas, pre-soaked
K tsp garlic, chopped
1 tbsp pickled lemon
K tsp red chilli powder (optional)
Salt and pepper to taste
