Cooking with Lounge | Chicken in a pot

Chicken Tajine
Ingredients
1 Chicken with skin (cut in pieces)
50ml Olive oil
2 Medium size onions (chopped)
10g Garlic (chopped)
½ tsp Black crushed pepper
½ tsp Oregano
150g Tomato puree
½ tsp Lemon preserves
6 pieces Dry apricots
10g Chopped olives
500ml Chicken stock
5g All spice power
1 tbsp Cinnamon powder
2 tbsp Saffron diluted in water
Salt to taste

Method
Cut chicken with skin into pieces. Heat the oil in a pan and sauté the cut chicken pieces which have previously been seasoned with salt, oregano and pepper. Remove the chicken from the pan and use the same pan to sauté chopped onion and garlic and apricots. Add lemon preserves and tomato puree and saute. Add chopped olives, cinnamon powder and all spice powder. Cook for two minutes. Add chicken stock into the same pan and flavor with salt, crushed pepper, and saffron diluted in water. Add the sautéed chicken to the pan and let it simmer for 10-15 minutes. Once again remove the chicken pieces from the pan. Blend the remaining ingredients in to a sauce in a blender. Add the blended sauce to the pan and add chicken pieces once again. Add apricots and olives. Let it cook for a while so that the sauce seeps into the chicken. Serve hot in a Tajine container.
