1 small cup ripe mango, cut into cubes
1 small cup musk melon, cut into cubes
1 small cup pineapple, cut into cubes
1 head each of iceberg lettuce, lollo rosso and butterhead lettuce
2-3 tbsp mint-mayonnaise (or yogurt-mint) dressing
1 tsp Parmesan, grated, to garnish
1 tsp parsley, finely chopped
Roughly tear the lettuces into bite-sized pieces with your hands (avoid using a knife since steel reacts with lettuce) and put into a salad bowl. Add the fruits, cheese and dressing. Toss well together.
In the serving plate, place the lettuce at the bottom. Stick the croutons upright into it and arrange the fruits around them. Garnish with parsley and serve.
