MANALI TROUT IN SAFFRON SAUCE

Ingredients:
1 Manali trout
1 cup chopped broccoli, snow peas, zucchini and asparagus
For marinade:
Basil leaves
Parsley leaves
Thyme leaves
1 tsp lemon juice
15ml white wine
2 pieces crushed garlic
1 tbsp olive oil
1 tsp mustard sauce
1/4 tsp freshly ground pepper
Salt to taste
For saffron sauce:
1 tbsp butter
2 tbsp cream
Saffron soaked in water
1 tsp crushed garlic
1/2 cup white wine
Salt and pepper to taste
Method: Chop the broccoli, zucchini and asparagus. Clean the trout and extract the fillet. To prepare the marinade, chop a few fresh basil, parsley and thyme leaves, squeeze one tablespoon of juice from a lemon. To that, add some white wine, crushed garlic, olive oil and mustard sauce along with salt and freshly ground pepper. Rub in the marinade on the fillet and keep aside for around 5 minutes.
Meanwhile, to make the saffron sauce, heat some butter in a pan. Add crushed garlic and cook until brown. Then add some white wine and the soaked saffron. Top it with cream and, add salt and pepper. Cook for about a minute and take off the flame
Heat the hotplate of the grill (you can also use a non-stick pan) and put some oil on it. Place the fillet on the grill plate and cook each side for around 2 minutes. Place some chopped vegetables (broccoli, zucchini, peas) on the grill. Serve with vegetables.
