MOQUECA DE CAMARAO
Ingredients:
450g fish
3tbsp fresh lemon juice
1/2tsp Salt
500ml coconut milk
1/3 cup olive oil
2 large onions, halved and thinly sliced
1 large garlic clove, crushed and minced
3tbsp cloves
1 medium green pepper, seeded and sliced
3 medium tomatoes, seeded and sliced
2tbsp paste of raw tomato (puree two tomatoes in a mixer)
3 stalks spring onions, sliced thin up to green
1tsp fresh parsley
Coriander leaves for garnish
Method:
Heat olive oil in a pan; add garlic, clove, onions, tomato, peppers and spring onions. Sauté the vegetables for about 2 to 3 minutes. Place fish in a small bowl and sprinkle with limejuice and salt. Let it marinate for 2-3 minutes. Cook the vegetables until soft, then add the tomato paste and fish and continue cooking until the fish is done (15 minutes). Add coconut milk. Return to boil for a minute, adjust seasonings and add parsley. Instead of coconut milk, you can add chicken stock also, depending on your taste. Garnish with coriander leaves. Serve with white rice or black bean rice (white rice with black beans).
