Cooking with Lounge | The South African pav bhajji

Ingredients:
1kg onions, chopped
300ml oil for frying
50g ginger paste
50g garlic paste
250g yoghurt
300g tomato puree
2tbsp coriander powder
1tbsp cumin powder
2tbsp red chilli powder
2tbsp chilli flakes
Salt to taste
1 loaf of bread
20g chopped onions for garnish
10g chopped fresh coriander for garnish
5g chopped green chillies for garnish
Method:
Heat oil in the pan and fry the finely sliced onions until golden brown. When the onion cools, mix it with curd and make a fine paste in a mixer. Keep aside.
Heat oil in a frying pan, add the ginger-garlic paste and cook for 2 minutes. Then add the onion paste. Cook on high flame, stirring continuously. Add the coriander and cumin powders, then the red chilli powder and chilli flakes, stirring all the while. Add salt, and keep stirring for about 5 minutes. Add the tomato puree, and cook on low flame for about 15-20 minutes. Check the seasoning, and keep aside.
Cut the loaf into halves and scoop out a hollow it. Warm it in the oven. Fill the hollow with the onion mixture. Garnish with chopped onions, green chilli and coriander. Serve hot with french fries.
