Vanilla-Scented Sweet Potatoes
Around 200g sweet potatoes, cleaned
1/2 tbsp heavy cream
1/3 of a vanilla bean, split lengthwise, seeds scraped
1 tsp orange or lemon zest, grated
2 tbsp unsalted butter
2-3 toasted walnuts (optional)
Preheat the oven to 350 degrees Celsius. Put the potatoes on a baking sheet and bake in the oven for an hour or until tender to a fork tip. Remove from oven and let them cool until warm enough to handle. Peel and discard the skin. Shred the potatoes in a food processor.
Meanwhile, melt the butter in a non-stick pan, add the cream, vanilla bean and orange zest, bring to a simmer over medium heat and cook for 5 minutes. Remove from heat. Discard the vanilla bean. Add the processed sweet potatoes to this mixture and cook for another 2 minutes.
Garnish with toasted walnuts and orange zest.
