• 2 tbsp cornflour or arrowroot (paniphal) flour
• 1 tsp baking powder
• 1 tsp baking soda

•Oil for greasing cake tin
Preheat oven to 180 degrees Celsius. Sift the flours, baking powder, baking soda and salt into a bowl. Beat sugar with oil in another bowl, and to this add eggs, one at a time. Beat till well incorporated before adding the next. Continue to beat till thick. Fold in carrots, walnuts, cinnamon, vanilla essence and flour mix. Spoon batter into a lightly greased 8-inch cake tin. Bake in preheated oven for about 1 hour. Test if done: a skewer inserted in the centre should come out clean. Bake for a few minutes longer, if required. Turn out on to a wire rack to cool.

•1 cup butter or oil
•2 tbsp oil
• 1 large onion, finely chopped
• 2 garlic cloves, crushed
•1 and 1/2 cups spinach, chopped

Heat oil for filling in a pan and fry onion over moderate heat, till softened. Add garlic, spinach and baby corn. Cook gently for 10 minutes, stirring occasionally. Cool slightly and then beat in cream, eggs or egg substitute, cheese, salt and pepper. Spoon filling into the pastry-lined dish. Bake in preheated oven for 35-40 minutes, till pastry is golden and filling is set. Cut into wedges. Serve with a mustard sauce and a salad.
