Carrot Cake
Ingredients
A perfect dessert: Carrot cakes.
(Serves 16; Prep time, 1 hour, 30 minutes)
• 1 cup brown or white rice flour
• 2 tbsp cornflour or arrowroot (paniphal) flour
• 1 tsp baking powder
• 1 tsp baking soda
•1/2 tsp salt
•3/4 cup partially refined sugar
•1/4 cup oil
• 2 eggs
• 1and 1/2 cups carrots, grated
•1/2 cup walnuts, chopped
•1 tsp cinnamon, powdered
•1 tsp vanilla essence
•Oil for greasing cake tin
Method
Preheat oven to 180 degrees Celsius. Sift the flours, baking powder, baking soda and salt into a bowl. Beat sugar with oil in another bowl, and to this add eggs, one at a time. Beat till well incorporated before adding the next. Continue to beat till thick. Fold in carrots, walnuts, cinnamon, vanilla essence and flour mix. Spoon batter into a lightly greased 8-inch cake tin. Bake in preheated oven for about 1 hour. Test if done: a skewer inserted in the centre should come out clean. Bake for a few minutes longer, if required. Turn out on to a wire rack to cool.
Cheese and Spinach Quiche
Ingredients
Snack time: Enjoy a slice of Cheese and Spinach Quiche.
(Serves 8; Prep time, 1 hour)
Shortcrust pastry
•3 cups gluten-free flour mix + extra for dusting
•3-4 tbsp water
•1 cup butter or oil
Filling
•2 tbsp oil
• 1 large onion, finely chopped
• 2 garlic cloves, crushed
•1 and 1/2 cups spinach, chopped
•1and 1/2 cups baby corn, chopped
•300ml cream
•4 eggs, lightly beaten, or egg substitute
•1/2 cup cheddar cheese, grated
•1 tsp salt
•1/2 tsp freshly ground black pepper
Method
Preheat oven to 200 degrees Celsius. Sift flour in a bowl and rub in butter till mixture resembles coarse breadcrumbs. Gradually add 3-4 tbsp of water and mix to make a firm dough. Turn on to a lightly floured surface and knead lightly till smooth. Roll out thinly and line a flan dish or any shallow baking dish, overlapping it on the sides. Heat oil for filling in a pan and fry onion over moderate heat, till softened. Add garlic, spinach and baby corn. Cook gently for 10 minutes, stirring occasionally. Cool slightly and then beat in cream, eggs or egg substitute, cheese, salt and pepper. Spoon filling into the pastry-lined dish. Bake in preheated oven for 35-40 minutes, till pastry is golden and filling is set. Cut into wedges. Serve with a mustard sauce and a salad.
