Mango, ginger and mint soup
Ingredients
Serves 4
400ml fresh mango purée
10g ginger, chopped
10-15 mint leaves
3 green chillies
150ml milk
4 scoops vanilla ice cream
Method
Blend mango purée, ginger, mint and green chillies into a smooth paste in a food processor. Add milk and blend for a minute.
In a soup plate, place a scoop of vanilla ice cream and pour the mango mixture around it. Garnish with a mint sprig. A few drops of lemon juice are optional.
