Cooking with Lounge | Rice paper rolls

Spicy Prawns and Mango in Rice Paper rolls
Ingredients
(makes 10 bite-sized rolls)
250g prawns, cleaned and deveined
1 tsp mustard
1/2 cup mango pulp
2-4 Thai red chillies, sliced (alternatively use regular red chillies)
1-2 red peppers, chopped
1/4 tsp lemon juice
1 tsp oil
1/2 spring onion, chopped
1/2 tsp chilli oil
1 packet rice paper (available in international food stores)
Iceberg lettuce, shredded
Salt to taste
Method
Combine lemon juice, chillies, salt, mustard and mix well. Add the prawns and toss well. Marinate for 20 minutes. Then add mango pulp and stir well. Heat oil in a pan, add the prawn mixture and simmer till prawns are cooked and the sauce, completely dry.
To make rolls, dampen rice paper in hot water and lay flat on a smooth surface. Place a little shredded lettuce and chopped red peppers down one side, top with cooked prawns, and drizzle with chilli oil and spring onion. Fold the edge of the rice paper over the filling, fold sides over and then roll up. Repeat with the rest of the rice paper.
Vegetarians can use cucumber sticks instead of prawns.
