Ingredients:
250g hung yoghurt
10g salt
3g white pepper powder
1g cardamom powder
7g five-spice powder
62g garlic puree (roasted)
16g Tahini paste
12g lemon juice
10g olive oil
60g fresh cream
2kg chicken leg, diced
2 pieces of coloured bell peppers
Iceberg lettuce
Mint leaves
Tomato slices
Method:
Keep aside the diced pieces of boneless chicken. To make the marinade, take hung yoghurt and add cream to it. Add white pepper powder, cardamom powder, salt and five-spice powder. Now add roasted garlic puree, or you can just crush and finely chop the garlic pods and add to the marinade along with olive oil. Add lemon juice and mix it well. Finally add the Tahini paste and mix.
Taste the marinade to check the salt content. Marinate the chicken with this mix and leave it for a couple of hours in the fridge.
Dice pieces of coloured bell peppers. Use satay sticks (or skewers) and put chicken pieces and bell peppers on them. You now place them in a grill. If you do not have a grill, put a tablespoon of olive oil in a non-stick frying pan and put the skewers with chicken and bell peppers in it. Cook until the chicken pieces turn light-brown. Serve with iceberg lettuce, slices of fresh tomatoes and some mint leaves.
