Cooking with Lounge | Fillet o’ Mustard

Ingredients
200g bhetki fish (four fillets)
2 tbsp mustard paste (a mix of black and white mustard seeds ground with a green chilli)
2 tsp mustard oil
2 green chillies, small
4 banana leaves (cut into 6-inch squares)
Salt to taste
Method
Smother each fillet with mustard paste, completely covering both sides. Add salt and leave aside to marinate for 10-15 minutes. Place each fillet on a banana leaf. Drizzle half a teaspoon of mustard oil over each fillet and place a slit green chilli on top.
Fold the fillet in the leaf, making a parcel. Tie with a kitchen string. Place the wrapped parcels in a steamer and steam for about 12 minutes until the fish is cooked through.
Unwrap the banana leaves, add another teaspoon of mustard oil for aroma. Serve with traditional “ghee bhat”—rice cooked with a teaspoon of ghee and some salt.
