Cooking with Lounge | Spicy and hot chicken

Pataka Chicken
Serves 2
Ingredients
180g boneless chicken
5 Guntur chillies
1/2 tsp salt
1/2 tsp sugar
1 tsp egg
10g refined flour
10g cornflour
20g spring onion, chopped
15g capsicum
2 tsp chilli paste
5g garlic, chopped
5g peanut, crushed
1 tsp light soya sauce
1/2 tsp soya sauce
1/2 tsp chicken broth powder
A celery leaf and a carrot
2g ginger
A pinch of pepper
Method
Heat oil in a pan. Sauté the garlic and ginger. Then add the Guntur chillies and chilli paste. Fry for 2 minutes. Take out this masala and keep separately. Marinate the chicken with salt, pepper, refined flour, chicken broth powder, egg and some cornflour for 5-10 minutes.
In another pan, heat oil and add the marinated chicken and sauté till brown. On a slow fire, add the Guntur chilli masala. Add light and dark soya sauce. Throw in the capsicum and some spring onion. Sprinkle sugar and salt and a touch of vinegar. Lastly, add the crushed peanut and the remaining chopped spring onion.
Serve on a platter. Garnish with a celery leaf and some sliced carrot.
