Cooking with Lounge | Tofu ‘tikki’

Tofu, spinach and corn cakes
Serves 2
Ingredients
600g tofu, grated
1kg spinach, blanched and chopped
20g green chillies, chopped
10g spring onions, chopped
5g coriander, chopped
5g ginger, chopped
200g corn kernels, chopped
Salt to taste
20g cornflour or refined flour
60g sweet and sour soy sauce with sesame seeds
Method
Blanch the spinach, squeeze out the water and finely chop it. Mix grated tofu, corn, spinach, coriander, spring onions, green chillies and ginger in a bowl. Make cakes of the mixture and shape them with your hands. If the mix is not binding, add cornflour or refined flour.
Add oil to a pan and shallow-fry the cakes on slow fire. Keep turning them till both sides are golden in colour. Serve the cakes with sweet and sour soy sauce, and garnish with spring onion.
