Cherry Mascarpone Mousse

Ingredients
500ml Whipped Cream
6 Egg yolks
300g Castor Sugar
300g Mascarporne Cheese
200g Fresh cherries (pitted)
100ml water
Sponge cake
2 Fresh cherries for garnish
Method
Pit the cherries and cook with half the castor sugar and water.
Whip the egg yolks and sugar on double boiler. Cool the egg mix and fold in whipped cream, then fold in the cooked cherries which must be cold too. Fold in the mascarporne cheese and the mousse is ready. Line a mould with sponge cake, put the mousse, add a layer of cooked cherries, and top with mousse. Put in the fridge for a couple of hours. Once the mousse cake is set, take it out of the mould, garnish with leftover cherry syrup and place two fresh cherries on top.
