Dark Chocolate Mousse
250g bittersweet chocolate, chopped
500ml heavy cream
150ml whipped cream
3 tbsp butter (at room temperature)
Boil the heavy cream in the microwave for 2-3 minutes. Remove and add the dark chocolate. Mix well until it becomes a smooth mixture. If the mixture coagulates, microwave for another minute. Fold in the cream and butter, and refrigerate for 15 minutes.
To check if the mousse is ready, dip an egg beater and pull out. The mousse should ideally form peaks on top. Scoop using a tablespoon dipped in hot water.
Optionally, the mousse can be served with fresh mangoes or strawberries.
