Cooking with Lounge | Chilled Summer Soup

CHILLED CANTALOUPE SOUP

Ingredients

200g green musk melon

10g holy basil

100ml milk

20ml champagne

Peel and dice the musk melon. Put in a blender along with holy basil and milk. Blend. Check taste for sweetness and add the champagne, blend for a minute. Optionally put a scoop of ice cream in the centre of the bowl and pour the soup into the bowl. Garnish with a basil sprig and serve.
