250g chicken, diced

1 tbsp ginger, sliced

1 tbsp garlic, sliced

3-4 spring onions, diced

3-4 dry chillies, whole

4-5 Schezwan peppercorns, whole

2 tsp soya sauce

1 tsp sugar

20ml cooking wine

1 egg

2 tbsp cornflour

250ml cooking oil (to fry the chicken)

50ml cooking oil

1 tsp sesame oil

Salt to taste


Marinate the chicken with salt, pepper to taste,10ml cooking wine, one teaspoon soya sauce, egg and cornflour. Keep aside for 20 minutes.

Heat the cooking oil in a pan, Add the marinated chicken, fry and as soon as it turns a golden colour, strain and keep aside. Take care not too overcook.

In a fresh wok, add 50ml oil, Schezwan pepper, dry chilli, garlic, ginger and the fried chicken. Pour the remaining cooking wine, soya sauce, add sugar and salt to taste. Top off with spring onions and sesame oil. Mix well for 2 minutes and remove from the fire.

Optionally garnish with tomatoes and iceberg lettuce.
