Braised mushroom and baby corn with broccoli in white sauce

100g mushrooms, diced

30g black mushrooms, diced (dried and soaked in water for about an hour)

100g broccoli

50g baby corn

5ml sesame oil

4 tbsp vegetable oil

20g ginger, sliced

20g garlic, sliced

1 tsp white pepper

50g cornflour

10g chicken powder

20ml water

Salt to taste


Boil water in an open pan and add salt and sesame oil to it. Add diced mushrooms, broccoli and baby corn. Boil for 3-5 minutes till tender. Strain and preserve the stock of the vegetables.

In a bowl, mix cornflour with 20ml water and keep aside.

Take the oil in a wok or a pan, fry the ginger and garlic. At this stage, you may optionally add spring onions. Put in 100ml vegetable stock and the cooked vegetables into the wok. Add seasoning (salt, pepper and chicken powder) and cook for 3 minutes. Add 3 tbsp oil. Mix well. In the vegetables, add the cornflour water to give it some thickness. Cook for an additional 2 minutes and serve.
