Grilled Halloumi with Bell Peppers

A popular cheese from Cyprus, the halloumi is mostly made from goats’ milk, has a smooth texture and is best eaten grilled

150g halloumi cheese (available at international food stores)

3 bell peppers (red, green and yellow), chopped

1 tbsp garlic, finely chopped

1 tbsp onion, finely chopped

4-5 cherry tomatoes

100ml tomato purée

30ml heavy cream

K tsp thyme

K tsp oregano

K tsp cumin powder

K tsp all spice powder

Pepper to taste

30ml olive oil

4-5 basil leaves


Cut the cheese into squares of 15-20g each. Brush the grill with some oil and grill the cheese and bell peppers.

Heat a tablespoon of oil in a pan, add garlic and onion and fry till golden brown. Add the spices and tomato purée. Put in the cherry tomatoes and cook till the mixture browns. Finish the sauce by adding basil leaves and cream. Arrange the cheese and bell pepper alternately on a paste, top with the sauce and serve hot with saffron rice or pita bread.
