Classic fondue


200ml dry white wine (Chardonnay or similar)

150g Gruyère cheese, grated

150g Emmental cheese, grated

1 tbsp kirsch (cherry liqueur)

A pinch of nutmeg powder

For accompaniment

1 bowl baby carrots, boiled

1 bowl small potatoes, boiled

1 bowl gherkin, boiled and chopped into bite-sized pieces

1 French baguette, chopped into bite-sized pieces and toasted

Heat a fondue pot or a heavy-bottomed saucepan over low heat and pour in wine. When the wine is about to boil, add the two cheeses, a little at a time. Stir continuously till all the cheese has melted. Keep cooking and stirring over very low heat till you get the desired consistency. Add the nutmeg powder and kirsch.

To serve, put the pot on a small stove and place bowls of the accompaniments alongside some fondue forks.
