Chicken in a polenta packet
Serves 1
Ingredients
100g chicken breast
20g arugula lettuce
90g fresh tomatoes
10g grain mustard
20g mayonnaise
Salt to taste
Pepper to taste
5g Cajun spice
20ml olive oil
For the polenta bread
80g refined flour
3g fresh yeast
Salt to taste
60ml water
5g polenta
Method
Next, to marinate the chicken, mix the chicken breast with Cajun spice, salt and pepper. Marinate for 10-15 minutes. Cook the chicken in olive oil on a hot plate until golden. Now grill it in the oven for 2-3 minutes and keep aside. For the spread, mix the mustard and mayonnaise. Once all the ingredients are ready, slice the bread in half, layer it with the arugula lettuce, sliced tomatoes and thinly sliced chicken breast.
