Cooking with Lounge | Kiwi and melon soup

Chilled kiwi soup


2 kiwi fruits, peeled and chopped

K a melon, chopped into bite-size pieces (approx. 3 tbsp)

200ml orange juice

1 tbsp, medium-size onion, finely chopped

1 tbsp, yellow bell peppers, finely chopped

2 tbsp ripe mango, chopped into cubes

1 tbsp, jalapeno, finely chopped

3-4 basil leaves, finely sliced

K tsp garlic, minced

Sea salt to taste


Chop the kiwi fruit into bite-size pieces. Blend the pieces, onion, melon, bell peppers, mango, orange juice, jalapenos and basil leaves in a food processor or blender until smooth. Add garlic and salt. Blend till no lumps remain. Pour into a medium-sized bowl. Cover and chill for 1-2 hours. Serve garnished with kiwi fruit slices, if desired.
