CARCIOFI AL GORGONZOLA
Ingredients
3 artichokes (2 whole, 1 chopped for stuffing)
3 tbsp walnuts (chopped)
3 tbsp onions (finely chopped)
3 tbsp butter
3 tbsp bread crumbs
30g Parmesan cheese
100ml cream
5 tsp parsley
50g gorgonzola cheese
For salad topping
4-5 lettuce leaves (torn)
3-4 cherry tomatoes (chopped into two)
Method
Take the two whole artichokes, peel and discard the three external layers to reveal the artichoke hearts. Slice the hearts into two equal parts. For the stuffing, take the third artichoke and chop into 2-inch cubes.
Take a pan, add 2 tablespoons of butter, onions, walnuts, bread crumbs and 3 teaspoons of parsley. Stir the mixture, add the chopped artichoke cubes and stir for a few minutes. Add salt as per taste. Take the pan off the fire and stuff the mixture into the artichoke hearts. Top with Parmesan cheese and bake in an oven at 250 degrees Celsius for 5 minutes.
On the side, prepare the cheese sauce in a fresh pan, add butter, gorgonzola cheese, the remaining parsley and cream. Take off the gas after 2 minutes. Pour the sauce over each artichoke, sprinkle 1 teaspoon of Parmesan cheese and serve with lettuce leaves and cherry tomatoes.
