Cooking with Lounge | Vegetable Jiaozi

Spinach and Mushroom Jiaozi

(Serves 2)


100g spinach leaves, shredded

100g mushrooms, chopped

100ml water

1 tbsp cooking oil

1 tbsp garlic, finely chopped

1 tbsp ginger, finely chopped

1 tsp chilli paste

1 tbsp mushroom-oyster sauce

1 tsp corn flour

1 tsp white pepper

Salt to taste

For the dough

100g refined flour

50g glutinous rice flour

1 tbsp oil

50ml cold water

Bring the water to boil and add chopped mushrooms and shredded spinach. Let it blanch for 30 seconds and strain.

Take a wok, put in a tablespoon of oil, the spinach and mushroom mixture, followed by the garlic, ginger, chilli paste, mushroom-oyster sauce and corn flour. Sprinkle the salt and pepper to taste. Add the water. Cook until the water dries, and keep aside.

To make the dough, take a large bowl, mix in all the ingredients and knead for 5 minutes. Cover and rest the dough for half an hour. Roll the dough into 1-inch balls and flatten each ball with a rolling pin. Stuff the flattened balls with around 15g of the above mixture. Bunch the edges to close around the stuffing and make a dumpling. Steam the dumplings in a microwave or over the flame in a pressure cooker for approximately 5 minutes.
