Ingredients

8 eggs

320ml Marsala wine

80ml champagne

180g sugar

200g cream

400g strawberries

Method

Heat water in a large pot. Bring to a simmer and reduce the heat. In a bowl, mix eggs, Marsala wine, sugar and champagne. Set the mixing bowl over the pot of water, making sure the water does not touch the surface of the bowl, and whisk the mixture gradually for 10 minutes until it triples in volume. When the mixture reaches a thick consistency, remove from heat and allow to cool for 15 minutes. Whisk heavy cream until it forms peaks. Now gently fold the cream into the egg mixture and serve with fresh strawberries.
