20g rucola leaves

40g feta cheese

3g fresh basil leaves

30g onion

10g Kalamata olives

Salt and pepper to taste

For the dressing

20ml balsamic vinegar

60ml olive oil

Crushed black pepper to taste

Salt to taste


For the dressing, mix the balsamic vinegar, salt and pepper in a bowl. Slowly start adding olive oil and continue to whisk until it starts to emulsify. Refrigerate. For the salad, cut the tomatoes into quarters and set aside. Marinate the rucola leaves with olive oil and season with salt and pepper. Arrange the rucola leaves and basil on a cold serving plate. Top with quartered tomatoes, crumbled feta, and drizzle the dressing over the salad. Garnish with onion rings, olives and serve.
