Chef Elam Rana of LodiThe Garden Restaurant, New Delhi, shows us how to get rid of the seasonal blues with this fresh salad

Summer Fruits and Sprouts with Honey and Fresh Lemon Vinaigrette

Serves 2


1 cup moong, sprouted

2 plums, medium-sized

1 mango (any variety), medium-sized

1 peach, medium-sized

1 apple, medium-sized

1 pear, medium-sized

6 leaves of assorted lettuce

4 tbsp extra virgin olive oil

2 tbsp wild honey

2 tbsp fresh lemon juice

Salt and fresh ground pepper to taste

Cut all the fruits into thin slices and place in a salad bowl. Add the lettuce leaves and moong sprouts. In a separate bowl, prepare the dressing by mixing together the olive oil, honey, salt, pepper and fresh lemon juice. Now, add the dressing to the salad bowl and gently toss. Make sure the dressing is added just before serving. Serve.
