Silken Tofu – 100 grms

Spinach – 50 grms

Carrot – 50 grms

Sesame seed – 100 grms

Japanese rice vinegar – 15 ml

Almond flakes – 5 grms

Minced garlic – 5 grms

Salt – to taste

Pepper – to taste


•Cut the carrots in thick strips and blanch them.

•Blanch the spinach separately and cool them in ice water.

•Grind the roasted sesame seeds either in the grinding pot or in a blender to a fine powder. Take out around 60 percent of the sesame powder to make the sauce.

•In the same pot add the sesame and mash them evenly. Add the carrot, spinach, salt and pepper to taste.


•Blend together sesame seed, vinegar, salt, pepper, garlic and sugar to a fine paste.

To assemble:

•Put the tofu mixture in the centre of the plate and pour the sauce on the sides.

•Garnish with almond flakes.

Shisho soup with Cherry tomato salad and broiled miso Daikon


Shisho Soup

• 1 cup shiso

• 1 cup baby spinach

• 1 tablespoon ginger, minced

• 1 piece garlic

• 2 tablespoons rice vinegar

• 1-2 cups ice

• 1 cup cream

Blend all the ingredients together other than the cream. At the end mix in the cream and adjust the seasoning with salt and pepper.

Broiled Miso Daikon

•Daikon/Radish – 1

•Kombu – 1 pc.

•Sweet miso – 2 tblspn

•Water - 1 ltr

Add kombu in cold water and bring to boil. Discard the kombu and add the Daikon and let it simmer at very low temperature for around 2 hours. Take out the Daikon and put sweet miso on top.

Cherry tomato salad

•Cherry tomato – 50 grms

•Assorted lettuce – handful

•Sweet miso – 10 grms

Cut the Cherry tomato into half and mix it with sweet miso and arrange it over the assorted lettuce.
