ARROZ COM FEIJAO (Black Bean Rice)

Ingredients:

250g black beans (soaked overnight)

2 cups white rice (soaked for 20 minutes)

4 cups water

1 tomato, chopped

1 onion, chopped

2 bay leaves

Chopped parsley

Salt to taste

Method:

Soak the beans overnight. Boil them until half done (about 30 minutes). In an electric cooker, melt butter and sauté bay leaves. Add a tablespoon of chopped onions and sauté for 2 minutes. Then add two or three tablespoons of chopped tomatoes and cook the stew for 2 minutes. Add the black beans, parsley and salt to taste. Add the rice, mix it in, pour water and cook for about 15 minutes in the cooker. You can add some water if the rice is not done well. Garnish with chopped parsley.
