Chocolate Mousse


6 egg yolks

90g sugar

600g semi-whipped cream

450g dark chocolate

50ml water

Strawberries to garnish


In a saucepan, heat sugar over medium heat. When it melts, add water and boil to form a syrupy consistency. Meanwhile, whisk the egg yolks till light and fluffy. Then add the hot syrup to the yolks, a little at a time. Keep whisking even after all the syrup has been added, till the mixture is cold and fluffy. Melt chocolate and add it to the egg mixture. Whip it together and fold in the semi-whipped cream in batches into the mix. Whip till nicely blended. Pour into small glasses and refrigerate for an hour. Garnish each with a strawberry.
