In 2020, Aditi Handa, baker and founder of the brand The Baker’s Dozen sold a million sourdoughs. It was a milestone for her eight-year-old company. For food enthusiasts, last year was about going back to roots and sourdough, believed to be one of the oldest leavened breads, resonated with this sentiment. Sharing sourdough art and chronicling personal stories of sourdough-making reached fever pitch on instagram. Fresh, tasty and good looking bread is a complete sensorial experience, after all. And, Handa knows.
The Baker’s Dozen is present across seven cities in India, such as Delhi NCR, Mumbai, Surat and more. Now, they are all set to open a sourdough experiential centre—The House of Sourdough—in Bengaluru tomorrow. It is a large space to learn about the history and culture of this bread and know about taste pairings. This is not all: on Saturday, they have planned a sourdough summit with a series of Instagram lives which will be hosted on @freshattbd. It is a digital-first format on the business of bread with a focus on sourdough.
The event is considered to be the very first sourdough summit in India. It constitutes masterclasses on sourdough making and creating delightful sourdough art—technically known as bread scoring. On the business side, there will be discussions on how food trends emerge and change, followed by personal accounts of food entrepreneurship. The speakers list has names like Pooja Dhingra who is on a panel discussion about food business, Kalyan Karmarkar will be speaking on food trends and the live session on sourdough making will be led by Handa.
There are other bakeries and entrepreneurs too who organise sourdough workshops through the year. There's Goa-based Sujit Sumitran who is known for exceptional sourdough art and his classes are in high demand. In Bengaluru, there's Selvan Thandapani who runs a bakery and fermentary named Sour House. Thandapani not only hosts workshops, but also sells the sourdough starter. There's Lavonne Bakery in Bengaluru that announces sourdough making workshops, once in a while, on their instagram page @lavonneacademyindia. Bengaluru also has Krumb Kraft by Samruddhi Bhat- Nayak. Watch out for her webinars on her Instagram page @krumbkraft. This month is known as sourdough September and in keeping with the theme, it could be a good idea to know more about one of the world's oldest breads.
The Sourdough Summit will be held on September 11(Saturday) between 11 am to 4 pm as live sessions on the Instagram handle @freshattbd.
